Food Alergies

January 28th, 2004 · No Comments

Wow, that’s interesting. In addition to having gall stones, I just
found out I have yeast allergies (…I’m a wreck!) Since fats don’t
bother me too much, I wonder if there may be a yeast connection.
I’ll need to keep a food log to tell. Thanks for the info.

Randi,
Based on what my doc said to me, yeast could be a reason for your gallstones,
it would be interesting to look into that further with your doc. How were
you diagnosed with your yeast allergy? My doc is looking at the following
potential causes of my gallstones; food allergies, improper calcium to
magnesium ratio, and/or hormonal. To test food allergies, my doctor has me
on an “Elimination Diet Program” where I eliminate all potential food
allergens from my diet and add them in for 24 hours then take them out again
and see how I feel. I have eliminated all corn, soy, citrus, eggs, wheat,
milk, yeast, sugar, caffeine, chocolate, vinegar from my diet. I have to

read every label. I have been eating a lot of white rice, low fat meats and
lots of fruits (I can have most vegetables but I don’t like veggies). There
are a lot of hidden ingredients in foods; for example, I cannot have store
bought chicken stock because it has yeast. My snacks consist of rice
crackers and fruit.
I have to plan ahead for what I am going to eat. I keep a log of what I eat
and any reactions. One of the hard parts is when I add a food it has to be
in pure form; like I cannot just add bread because it has gluten, and yeast.
The symptoms that I am looking for are: Short term symptoms; shock, hives
and swelling of the skin or delayed such as; fatigue, irritability, weight
gain, food cravings, gastrointestinal disturbances, headaches, arthritis,
joint pains, muscle aches, respiratory congestion, skin rashes, anxiety and
depression.
The nutritionist who works with my doc suggested the book: The New Natural
Healing Cookbook : A Wellness Program for Your Optimal Health
by Bessie J, M.D. Tillman, L. Terry Chappell which is available through
amazon.com and bn.com. Has anyone used this cookbook?
I have also found through the blood tests that he performed that I am insulin
sensitive and hypoglycemic. So I would assume that this is a factor in my
gallstone formation.
THIS IS NOT A LONG TERM DIET but just to help identify what I could possibly
be allergic to and if that could be causing my gallstones. Ultimately my doc
wants me on a low glycemic index diet — like Barry Sears’ “The Zone” diet.
